Directions

    1. Drizzle the sweet potatoes and garlic with oil and season with salt and pepper.
    2. Wrap the garlic head in foil, then place into the air fryer with the sweet potatoes at 180 °C for 30 minutes until tender.
    3. Remove sweet potatoes and garlic from the air fryer.
    4. Cut the sweet potatoes in half and scoop out the flesh, leaving the skin intact.
    5. Squeeze the soft garlic out of its skin, then add to the sweet potato flesh along with the vegan mayonnaise, pesto, parsley and chives, season with salt and pepper to taste and mix well.
    6. Scoop mixture back into the sweet potato flesh, then sprinkle with breadcrumbs. 
    7. Return to the air fryer for another 5 minutes to heat through and brown the top slightly.

  • 2 O-So-Orange Premium Sweet Potatoes
  • 1 head garlic; top cut off
  • 1 tbsp. Forage and Feast Cold Extracted Extra Virgin Olive Oil
  • ½ cup Simple Truth Vegan Tangy Mayonnaise
  • 1 tbsp. basil pesto
  • 2 tbsp. chives; chopped
  • 2 tbsp. Living Herbs Fresh Parsley; chopped
  • ¼ cup breadcrumbs
  • Salt and pepper
