Directions

1. Butter the sourdough on both sides, then toast until golden using a grill press. 

 

2. Cook the bacon until golden and cooked through.
Spread mayonnaise on both slices.

 

3. Squeeze lemon juice over the micro leaves, then stack them onto one of the bread slices. 

 

4. Top with the sliced onion, tomatoes and season to taste. 

 

5. Crumble the feta on top, add the cooked bacon, close the sandwich, slice and serve.

  • 1 tbsp. (10ml) mayonnaise
  • ½ punnet micro leaves
  • Juice of ¼ lemon
  • ¼ red onion; sliced
  • 4 slices tomato
  • 25g feta cheese
  • Salt and pepper to taste
