Lactose-free Broccoli & Cheese Frittata

Description

Get those nutrients in with this Lactose-free Broccoli & Cheese Frittata. Not only is it full of flavour, but the broccoli component will ensure plenty of feel-good fibre! 

Directions

1.    Preheat oven to 180 °C.

2.    Heat oil in a non-stick pan and sauté onion, chilli and rosemary until fragrant. 

3.    Add broccoli and fry until soft, followed by cherry tomatoes and lemon juice. Fry for 2 – 3 minutes.

4.    Mix remaining ingredients together in a bowl. 

5.    Pour the frittata mixture into the pan and cook until the edges start to bubble, and then move to the oven.

6.    Cook in the oven for 10 – 15 minutes or until set. 

7.    Grill until golden, remove from the oven and serve topped with fresh rocket. 

Ingredients

  • 2 tbsp. (30 ml) olive oil
  • 1 small onion; chopped 
  • ½ tsp. (3 ml) red chilli flakes
  • 1 tsp. (5 ml) rosemary; chopped
  • 1 packet purple broccoli florets; sliced 
  • Cherry tomatoes
  • Squeeze of lemon
  • 6 large free-range eggs
  • ½ cup (125 ml) Simple Truth Lactose-free Cheddar; grated
  • Salt and milled pepper
