Description
Take the hassle out of dinner time prep with this deliciously simple Spiced Lamb, Tomato & Baby Marrow Tray Bake by Zola Nene.
Directions
1.Preheat oven to 200 °C.
2.Grease a large baking tray.
3. In a large mixing bowl, season the lamb chops with the rub, salt and pepper and cover with a heavy hand of the Chimichurri sauce.
4. Drizzle with 2 tablespoons olive oil and toss well in the bowl.
5. Place the baby narrows and tomatoes onto the tray, drizzle with a tbsp. olive oil then toss well.
6. Place seasoned chops on top of marrows, then bake for 25 – 30 minutes until lamb chops are cooked through, and the veggies are tender.
7. Serve with a sprinkling of fresh thyme.
Ingredients
- 12 Simple Truth Certified Natural Lamb Loin Chops
- 1 punnet courgettes/baby marrows; cut in half lengthways
- 1 punnet mixed cherry tomatoes
- Salt and pepper to taste
- 3 tbsp. Forage and Feast Olive Oil
- 1 tbsp. Simple Truth Sweet & Spicy BBQ Rub
- 4 tbsp. Forage and Feast Apricot Chimichurri Sauce
- 6 sprigs of fresh thyme from Living Herbs; to garnish
- Salt & pepper to taste
