Braai Day celebrations just aren’t the same without these marvellous Milk Tart Dippers! Created by chef Zola Nene, this proudly South African braai dessert recipe is a must for your National Braai Day feast as it goes down a treat – and it’s easy too, only taking 30 minutes to whip up.

This sweet delight is a whole new take on a classic South African dessert and is sure to become a favourite in your braai desserts repertoire. Try it with your next braai, your guests will be delighted!

Directions

For the Milk Tart:

1. Make sure your braai coals are low to medium in heat. 

2. In a medium skillet saucepan, combine the milk, vanilla essence, butter, sugar and cinnamon, then heat on the braai for a few minutes until melted.

3. In a smaller mixing bowl combine the flour, corn flour, salt and three egg yolks – add a little bit of milk and mix until you have a smooth paste.

4. Mix this floury paste into the warm milk mixture and whisk through.

5. Beat the egg whites until stiff and fold into the warm milk mixture.

6. Return the pot to the coals and cook for another 3 minutes, stopping to whisk every 30 seconds until the mixture has thickened. Leave to cool.

 

For the Pastry Dippers:

7. Roll out the puff pastry, then place it directly on the braai grid and brush with melted butter. 

8. Sprinkle the sugar and cinnamon liberally over the pastry and fold in half. 

9. Place the braai grid directly over the coals and keep turning until crisp and brown. You can also brush with the leftover butter. 

10. Once browned and crisp, remove from the braai and place on a cutting board. 
 

Ingredients

  • 500 ml full cream milk
  • 1 tsp. vanilla essence
  • 2 tbsp. butter
  • 4 tbsp. sugar
  • 1 tsp. ground cinnamon
  • 2 tbsp. cake flour
  • 1 heaped tbsp. corn flour
  • A pinch of salt
  • 3 egg yolks (Simple Truth Free-range Eggs)
  • 3 egg whites (Simple Truth Free-range Eggs)

 

For the Pastry Dippers:

  • 1 Roll of ready-made puff pastry 
  • 2 tbsp. Butter; melted
  • 3 tbsp  Castor sugar
  • 1 tsp. Ground cinnamon

 

Serving Suggestion:

Cut up the pastry to your desired size dipper and dip into the milk tart filling!
