Pap, Chakalaka and Wors by Zola Nene

Chef Zola brings together the multicultural flavours of our Rainbow Nation with this Pap, Chakalaka and Wors recipe to remind us that local will always be lekker.
Directions
1. Mix maize meal with 1 cup water, place remaining 2 cups water in a pot with the salt and bring to the boil. Add maize mixture, then stir over low heat until thickened. Cover and allow to cook over low heat for 30 – 40 minutes, stirring occasionally.
2. Heat oil, then sauté onion, peppers, garlic and ginger until soft. Add curry powder then sauté for a minute. Add the carrots and baked beans, stir together then add the water. Cover and simmer for 5 minutes. Season to taste with salt and pepper.
3. Cook the boerewors in a hot pan with oil until browned on both sides and cooked through.
4. Serve generous pieces of wors on top of the pap, then smother with the chakalaka.

1 coil Championship Boerewors
For Pap:
- 1 cup maize meal
- 3 cups water
- ½ tsp. salt
For Chakalaka:
- 2 tbsp. sunflower oil
- 1 onion; diced
- ½ red pepper; diced
- ¼ yellow pepper; diced
- ¼ green pepper; diced
- 2 garlic cloves; chopped
- 1 tbsp. grated fresh ginger
- 1 tbsp. curry powder
- 2 carrots; grated
- 1 tin baked beans
- ½ cup water
- Salt and pepper, to taste
