Directions

1. Place a skillet over a bed of low burning coals. The coals shouldn’t be hot.

2. Melt the chocolate and butter together in the skillet.

3. In another bowl, whisk the eggs and sugar to combine till light and fluffy. 

4. Mix the flour, cocoa powder and salt together. 

5. Whisk the egg/sugar mix into the melted chocolate butter mix until just combined.

6. Add the flour and cocoa mix and stir to combine. 

7. Lightly crush the peppermint crisp bars and place on top of the brownie mix. Don’t mix in, the mixture will let it sink in a little. 

8. Place a lid on top of the skillet and place a few hot coals on the lid. 

9. Make sure you still have cooler coals under the skillet so as not to burn the base.

10. Leave for 15 minutes and then check. If you like your brownies extra gooey, you can adjust the timing accordingly after 15 minutes.

  • Skillet of  25 -28 cm diameter pan Or ¼ sized potjie pots

 

  • 200 g Dark chocolate; chopped
  • 280 g Butter; cut into small pieces
  • 6 large eggs (Simple Truth Free-range Eggs)
  • 2 Cups castor sugar
  • ⅔ Cup cake flour 
  • ½ Cup cocoa powder; sifted
  • 3 x 50 g Peppermint Crisp Chocolate Bars
  • A pinch of salt

 

Serving Suggestion:

Serve with vanilla ice cream of choice and top with crushed peppermint crisp.
