Simply toss the pasta with the fried spring onion, garlic, chicken-style pieces, sundried tomatoes, diced Italian tomatoes and a pinch of chilli flakes – for a bit of bite, then garnish with fresh basil and parmesan shavings. The result is a delicious, saucy tomato pasta that is truly bursting with flavour!

Directions
1 Cook the pasta according to the package instructions, reserving ½ a cup of the pasta cooking water.
2 While the pasta cooks, cut the plant-based chicken pieces into bite-sized pieces.
3 Add the olive oil to a large pan and add the spring onion and garlic.
4 Cook for 2 minutes. Add the chicken pieces and cook for another 2 minutes, then add the pasta sauce, sundried tomatoes and chilli.
5 Let the sauce simmer for 5 minutes or so.
6 Toss the pasta with the sauce, adding a splash of pasta cooking water if it seems too dry.
7 Serve with fresh basil and parmesan shavings.

- 2 tbsp. olive oil
- 4 stalks spring onion; chopped
- 1 clove garlic; crushed

- 1 can/tin (410 g) diced Italian tomatoes
- ½ cup marinated sundried tomatoes; finely chopped
- ½ tsp. (3 ml) chilli flakes
- 200 g vegan pasta of your choice
- Fresh basil, for serving
- Vegan parmesan shavings, for serving
- Salt and freshly milled pepper; to taste
- Roasted cherry tomatoes (optional extra for serving)
