Description

It’s a warm creamy delight that has just the right additions to the bowl; you’ve just found your new winter favourite in this Platinum Soups Creamy Mushroom Soup with Simply Great Cheese & Onion Croutons and fresh herbs.

Directions

1. Fry mushrooms in a pan with olive oil, salt and pepper until cooked, and set aside.

2. Heat the Platinum Soups Creamy Mushroom Soup as per packet instructions.

3. While the soup heats up, prepare the parsley, thyme and chives.

4. Mix crème fraiche, 3 tablespoons of olive oil and chives together in a bowl until well combined.

5. Pour the hot soup into a bowl.

6. Garnish the soup with pan-fried mushrooms, a good sprinkle of Parmesan cheese, chopped parsley, thyme and chives.

7. Add a decent dollop of crème fraiche mixture and a drizzle of truffle oil.

8. Add a few of the Simply Great Cheese & Onion croutons, and enjoy.

● A handful of exotic mushrooms of your choice
● Parmesan cheese; grated
● 185 g cultured cream / crème fraiche
● Fresh parsley; chopped
● Fresh thyme; chopped
● Fresh chives; chopped
● Simply Great Cheese & Onion Croutons
● Extra virgin olive oil
● Truffle oil (to pour over soup, if desired)
