Directions

1. Bring stock to a boil, then sprinkle in the polenta while whisking.

2. Once thickened, cover and leave to simmer gently for 30 minutes until cooked through.

3. Stir in the Parmesan and butter, then season to taste.

4. Transfer to a greased sheet of foil, then roll to form a log. Set aside to cool completely until set.

5. Fry the mince in a pan with oil, then add BBQ spice. Sauté until browned, then add the sauce and water, and simmer for 5 minutes.

6. Season to taste, stir in the frozen spinach, then transfer to an oven dish.

7. Once cooled, slice the polenta, then layer over the mince, alternating with sliced tomato.

8. Sprinkle with Parmesan and bake in a pre-heated 180°C oven for 30 minutes, until the cheese is melted, and the top is golden brown.

  • 3 cups vegetable stock
  • ½ cup Parmesan cheese (plus extra 2 tbsp. for topping)
  • 25g butter
  • 1 tbsp. oil
  • 1½ tbsp. BBQ spice
  • 1 cup Forage and Feast Roasted Onion Braai Sauce
  • 1 cup frozen spinach
  • ½ cup water
  • 3 tomatoes, sliced
