Protein-packed Chicken Ramen Bowl

Description

Get your delicious fill of power from this little bowl of protein, yet another wholesome way to enjoy your Simple Truth Free-range Whole Chicken.

Directions

1. In a large pot, heat up a little olive oil and sauté the vegetables lightly until just golden brown.

2. Deglaze with the white wine and then add the water.

3. Add the whole chicken and bouquet garni and allow to simmer gently for about an hour or until the chicken is cooked through.

4. Once chicken is cooked, remove from the stock and shred or slice the meat. Set the sliced chicken aside and return the carcass to the stock.

5. Continue to simmer for a further hour and a half to really intensify the flavour of the stock. Once stock is finished, strain and pour the broth into a clean pot.

6. To make the ramen: flavour the stock with the soy sauce, chilli, garlic and ginger.

7. Heat up the cauliflower noodles in the stock and divide both noodles and broth equally between four bowls.

8. Add some sautéed mushrooms, blanched broccoli and thinly sliced radishes to each bowl. Top with some finely sliced spring onion and serve with some extra sliced chilli if you like it extra spicy.


 

Ingredients

For the Chicken Stock/Broth:

  • Olive oil
  • ½ cup (125 ml) carrots; finely chopped
  • ½ cup (125 ml) onions; finely chopped
  •  ½ cup (125 ml) celery; finely chopped 
  • ½ cup (125 ml) leeks; finely chopped 
  •  2 tbsp. (30 ml) white wine 
  •  1.5 L water
  • 1 Simple Truth Free-range Whole Chicken 

 

For the Bouquet Garni:  

  • 1 bay leave
  • 3 sprigs parsley
  • 6 peppercorns
  • 1 sprig of fresh thyme 

 

For the Ramen:

  • ¼ cup (60 ml) soy sauce  
  • 1 tsp. (5 ml) chilli; minced
  • 1 tsp. (5 ml) garlic; minced 
  • 2 tsp. (10 ml) fresh ginger; minced 
  • 1 packet (250 g) Simple Truth Cauliflower Noodles 
  • 125 g Portabellini mushrooms; chopped and sautéed
  • 100 g baby broccoli; blanched
  • 4 radishes; thinly sliced  
  • 2 spring onions; thinly sliced  
  • Extra chilli; deseeded and sliced (optional)
