Red Curry Cauliflower Noodles by Zola Nene

Description

Meat-free doesn’t mean less delicious. Serve up flavour in a flash with Zola Nene’s recipe for Red Curry Cauliflower Noodles. Ingredients available at Checkers.   

Directions

1. Preheat oven to 180 °C.

2.  Drizzle cauliflower with 1 tablespoon of olive oil and cumin seeds then roast for 20 minutes until golden and cooked through.

3. In a pot, heat 1 tablespoon olive oil, add red curry paste and sauté over low heat for a minute. Add coconut milk and bring to the simmer.

4. Pour boiling water over noodles and leave to soak for 5 minutes.

5. Add pak choi to the pot and simmer for two minutes. 

6. Divide the noodles and roasted cauliflower between the bowls, then ladle curry broth over. 

7.  Serve with a sprinkle of fresh coriander.

●    1 head of cauliflower; cut into florets
●    2 tbsp. Forage and Feast Olive Oil
●    1 tsp. cumin seeds
●   2 packets of Simple Truth Cauliflower Noodles
●    2 tbsp. Thai red curry paste
●    1 tin of coconut milk
●    2 heads of pak choi; washed and quartered
