Roast Cauliflower Steaks with Chimichurri

High in fibre, packed with an impressive list of nutrients and oh-so delicious; this vegan meal is fit for all occasions.

Directions

1. Preheat oven to 180°C or prepare braai to a medium heat and braai steaks on the grid.

2. Remove the outer leaves from each cauliflower head. Slice into 2 – 3 thick steaks and lightly spray baking tray and steaks with coconut oil. Set aside.

3. In a small bowl, stir together chipotle rub, lemon juice and zest, and garlic together and rub all over the steaks. Place in the oven and roast for 10 –12 minutes or until cooked through. Set aside.

4. Combine onion, chipotle sauce, garlic and vinegar in a medium bowl. Let sit for 10 minutes. Stir in chopped coriander, parsley and oregano. Whisk in the oil.

5. Serve cauliflower steaks topped with chimichurri and crushed walnuts.

  • 2 large heads cauliflower
  • 1 can Simple Truth Coconut Oil
  • 2 tbsp. (30 ml) Simple Truth Chipotle Spice Rub
  • Juice and grated zest of 1 lemon
  • 1 – 2 cloves garlic; finely minced
  • Chimichurri
  • 2 tbsp. (30 ml) Simple Truth Chipotle Sauce
  • 1 small red onion; finely chopped
  • 2 – 3 garlic cloves; thinly sliced or finely chopped
  • ¼ cup (60 ml) red wine vinegar
  • Salt and milled pepper
  • ½ cup (125 ml) coriander
  • ¼ cup (60 ml) parsley
  • 3 tbsp. (45 ml) oregano
  • 1/3 small cup (80 ml) olive oil
  • 1 packet (100 g) walnuts; toasted and chopped
