Directions

1. Preheat oven to 160 °C.

2. Drizzle the garlic generously with olive oil and season well with salt and pepper.

3. Place the garlic, cut-side-down onto a baking tray and roast in oven for about 30 minutes or until the garlic is soft and lightly golden.

4. Remove from oven and increase the temperature 200 °C.

5.Turn garlic over, add the herbs and drizzle with a little more olive oil before placing back into the oven for a further 10 minutes or until sage is crispy and garlic is golden.

6. Serve the garlic alongside any roast.

  • 8 large garlic bulbs; halved horizontally
  • 3 tbsp. (45 ml) Forage and Feast Olive Oil
  • Salt and pepper
  • Handful of fresh sage leaves
  • Handful of fresh thyme sprigs
