Satay Baby Marrow Spaghetti with Vegetables

Description

Enjoy some spaghetti goodness without the guilt with this nutritious Satay Baby Marrow Spaghetti with Vegetables recipe. It’s the easiest way to get those veggies in and impress friends and family.

Directions

1. Heat oil in a non-stick pan and fry onion, garlic and chilli until soft.

2. Add sugar snaps, radishes, peas and kale; fry for 4 – 5 minutes or until soft.

3. Add baby marrow spaghetti with a squeeze of lemon and chopped herbs.


Satay sauce:

1. Mix lime juice, honey, soy sauce, curry powder, peanut butter and coconut milk in a small bowl.

2. Transfer to a small pan and heat gently for 5 minutes, stirring continuously until combined. Add an extra splash of coconut milk if too thick and adjust seasoning.

3. Serve spaghetti and vegetables drizzled with satay sauce, extra herbs and chopped chilli.

 

Ingredients

  • 1tbsp. (15 ml) olive oil
  • 1 red onion; finely sliced
  • 2 garlic cloves; crushed
  • 1 chilli; finely sliced
  • 1 packet sugar snaps
  • 1 packet shelled peas
  • 6 – 8 radishes; halved
  • 1 bunch kale; torn and ribs removed
  • 1 packet (350 g) baby marrow spaghetti
  • Juice of ½ lemon
  • ⅓ cup (80 ml) basil
  • ¼ cup (60 ml) mint


Satay sauce:

  • 2 limes; juiced
  • 1 tsp. (5 ml) clear honey
  • 2 tbsp. (30 ml) soy sauce
  • 1 tsp. (5 ml) curry powder
  • ⅓ cup (80 ml) Simple Truth Smooth Peanut Butter
  • ½ cup (125 ml) coconut milk
