Enjoy a protein-packed dish with this easy-to-make Saucy Lentils and Roasted Chicken recipe by Chef Zola.

Directions

1. Heat olive oil in a pot then add onion and sauté until softened. Add garlic, oregano, garam masala and curry powder then cook for a minute to release the flavour from the spices.

2. Stir in the washed lentils, stock cube and boiling water to the pot, then cover with a lid and leave to simmer for 30 minutes or until the lentils are soft.

3. Add the roasted onion braai sauce and leave to simmer for another 15 minutes.

4. Season the chicken with BBQ spice, drizzle with a bit of oil then roast in a preheated 180 °C oven for 45 minutes or until the chicken is cooked through.

5. Serve the chicken on a bed of lentils.

  • 2 tbsp. olive oil
  • 1 onion; chopped
  • 2 garlic cloves; chopped
  • 1 tsp. dried oregano
  • 1 tbsp. garam masala
  • 2 tsp. curry powder
  • 1 cup dried lentils; washed
  • 1 chicken stock cube
  • 3 cups boiling water
  • 1 cup Forage and Feast Roasted Onion Braai Sauce
  • Salt and pepper; to taste
  • 4 chicken pieces (thighs and drumsticks)
  • 1 tbsp. BBQ spice
