Directions

1. Cook the schnitzels in the oven or air-fryer until crisp and cooked through.

2. In a large bowl, combine the lettuce, cucumber, carrots, tomatoes, onion and sweetcorn. Season with salt and pepper, then drizzle with half the dressing, toss well and divide into two serving bowls.

3. Chop the cooked schnitzel into bite-size pieces, then lay on top of the salad.

4. Drizzle with more pesto dressing to serve

  • 180g lettuce and herb mix
  • ½ cucumber; diced
  • 1 carrot; peeled and julienned 
  • 2 Roma tomatoes; chopped
  • ½ red onion; sliced
  • 1 cup sweetcorn kernels
  • Salt and pepper, to taste
  • 125ml Forage and Feast Coriander Pesto Dressing
