Slice the tender roast thick or thin, or roughly pull apart the succulent meat with a fork. However you like it, Zola highly recommends that you serve it with all its delicious pan juices.

Directions

1. Preheat oven to 160°C.

2. Place the lamb, carrots, onions, garlic, rosemary and thyme into a roasting dish.

3. In a bowl, combine vegetable stock, paprika, cumin, salt, chilli flakes, parsley and onion marmalade, and mix well. Pour over the lamb and veg, cover with foil, then roast for 2½ hours.

4. Remove the foil, then continue to roast for another hour to brown the top.

5. Slice or pull apart the lamb and place back into the roasting juices to serve along with the carrots, onions and garlic.

  • 500g mixed carrots; peeled and halved
  • 2 red onions; peeled and quartered
  • 10 garlic cloves; peeled
  • 2 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 500ml vegetable stock
  • 1 tbsp. paprika
  • 1 tbsp. ground cumin
  • 1 tsp. salt
  • ½ tsp. dried chilli flakes
  • 2 tbsp. fresh parsley; chopped
  • 3 tbsp. Forage and Feast Onion Marmalade
