Directions

1. Pierce the jalapeño peppers, chillies and peppers with a knife to prevent them from bursting on the fire.

2. Place the jalapeños, chillies and peppers on the grill over the hot fire along with the onions and tomatoes. 

3. Cook until charred and tender.

4. Once charred, cut the jalapeños and peppers in half horizontally, and remove the stalks and deseed (optional but recommended).

5. Optional: Remove any burnt pieces off the skin.

6. Place the jalapeños, chillies and peppers into a blender or a pestle and mortar, along with the charred tomatoes, onions, vinegar and sugar, to form a sauce.

7. Season with salt and pepper to taste.

8. Drizzle the lamb chops with olive oil, then season with salt and black pepper. Add the rosemary and garlic and toss to coat. 

9. You can either let these marinate for a couple of hours or use immediately. 
10. Start by rendering the fat by standing them on their sides to crispen up the fat.

11. Turn them onto their sides and cook the chops on a medium braai until browned on both sides. 

12. Serve the lamb chops smothered with extra dollops of the spicy sauce and a scattering of fresh coriander. 

Ingredients

For the Lamb Chops:

  • 10 – 12 Simple Truth Lamb Chops
  • 2 tsp. Forage and Feast Extra Virgin Olive Oil
  • 1 tsp. fresh rosemary; roughly chopped or a few sprigs of fresh rosemary 
  • 1 tbsp. fresh garlic; chopped
  • Salt and pepper, to taste


 

For the Sauce:

  • 2 jalapeño chillies; whole
  • 4 red chillies; whole
  • 2 red peppers; whole
  • 1 onion; peeled and halved
  • 4 rosa tomatoes; halved
  • 2 tbsp. Simple Truth Apple Cider Vinegar
  • 2 tbsp. brown sugar
  • Salt and pepper, to taste
