Directions

1. Reheat the leftover shredded brisket in a medium to large pan and add the hoisin sauce. Sauté over a medium heat until warmed through.

2. To make the charred pineapple, you can either braai the pineapple slices on either side until charred, or heat in a pan until smoking hot.

3. Mix the rest of the ingredients into the pineapple to create the salsa, and season well.

4. To make the coriander and lime sour cream, mix well and season.

5. Build your tacos by adding a liberal amount of brisket, salsa, and sour cream.

Ingredients

  • 8-12 hard-shell tacos
  • 2 cups left-over shredded brisket
  • ½ cup hoisin sauce

 

 

For the Charred Pineapple Salsa: 

  • 4 slices pineapple
  • 1 red pepper, roasted or fresh; chopped
  • ¼ red onion; sliced
  • 8 cherry tomatoes; chopped
  • Juice of a lime
  • Salt and pepper
  • Optional chilli to taste

 

 

For the Coriander and Lime Sour Cream: 

  • ½ cup sour cream
  • A handful fresh coriander; finely chopped
  • Finely grated rind of a lime
  • Salt and pepper
