Sticky Ayoba Cola Ribs
Description
When it comes to the braai, you can’t go wrong with liberally basting our thick and tender ribs with this cola marinade. It’s the ultimate sweet-sticky glaze!
Directions
1. Place ribs in a sandwich grid, as per packet instructions, braai according to instructions, about 3 hours over coals. Until the fat has rendered and crisped.
2. Heat oil in a saucepan, sauté rosemary, chilli flakes, onion and seasoning until softened. Stir through butter, garlic, tomato sauce, mustard, sugar, Worcestershire sauce and Coca-Cola.
3. Bring to the boil, reduce heat to a simmer, stirring often until the sauce has thickened.
4. Adjust seasoning, allow cooling. Blend sauce until smooth.
5. Carefully baste ribs, 2 hours into braaing, liberally until ribs are deliciously sticky.
6. Serve with wedges of lime or lemon and buttery garlic bread.
Ingredients
• 2 racks of Lamb Staanribs
For the Basting Sauce
• 2 tbsp. (30 ml) oil
• 1 tbsp. (15 ml) rosemary; chopped
• 2 tsp. (10 ml) chilli flakes
• 1 onion; chopped
• ½ cup (125 ml) butter
• 3-4 garlic cloves; minced
• 1 cup (250 ml) tomato sauce
• 2 tbsp. (30 ml) Dijon mustard
• ¼ cup (60 ml) malt vinegar
• ¼ cup (60 ml) Worcestershire sauce
• 1 ½ cup/can (375 ml) Coca-Cola
• Salt and ground black pepper
