Tango & Apricot Glazed Snoek

Description

Your fish braai just got better! Pop our succulent, responsibly sourced snoek onto the coals with an apricot jam glaze and our famous Tangos for incredible flavour.

Directions


1. Prepare coals or wood until medium in heat. 

2. Pat snoek dry and place skin side down on oil brushed, foil-lined sandwich grid. Season liberally with salt and pepper.

3. Heat olive oil and butter in a saucepan. Sauté onion, thyme, garlic and ginger for 2–3 minutes until soft and fragrant. 

4. Mix through jam, chutney and Tango juice while stirring to combine, simmer for 5 minutes to combine flavours. Adjust seasoning and set aside. 

5. Place snoek on the braai, over medium coals, glazing continuously until cooked through and deliciously charred. 

6. Serve with charred Tangos, scattered with pomegranate seeds. "

Ingredients

•    1 Ready to Braai Snoek; cleaned

•    Salt and ground black pepper; to taste

•    Pomegranate seeds; for serving

•    2-3 Tangos, sliced in half and charred 

 

For the Glaze

•    ½ cup (125 ml) butter

•    2 tbsp. (30 ml) olive oil

•    1 onion; finely chopped

•    3 tbsp. (45 ml) fresh thyme; chopped 

•    2 tsp. (15 ml) crushed garlic and ginger

•    ½ cup (125 ml) apricot jam

•    ¼ cup (60 ml) peach chutney

•    2-3 Tangos; juiced
